We spoke to Roko Palmic, Executive General Manager of Meneghetti, about the development of the establishment, the importance of genuine quality and his very personal definition of luxury.
ALEXANDRA GORSCHE: How has Meneghetti developed in recent years, and where is it heading?
ROKO PALMIC: In recent years, Meneghetti has evolved from a secluded retreat into a destination that appeals to all the senses. With the expansion of our spa area, the opening of a stylish beach club and the new Garden Pavilion for special occasions, we have created spaces that allow guests to experience different facets of their stay.
And yet the essence has remained the same. The tranquillity of the Istrian landscape, the play of light across the vineyards, the scent of pine trees and earth. The sea is ever-present, without ever intruding. At the same time, Rovinj is only about twenty minutes away and offers a lively contrast. Pula Airport is also just thirty minutes away.
Our vision is to further refine this balance and establish Meneghetti as a place where nature, indulgence and understated luxury come together quite naturally.
What difference does it make to develop our own products?
For us, culinary art does not begin in the kitchen, but outside. In the vineyard, in the olive grove, in the garden. Our products are an expression of our terroir. They embody the identity of this region. A glass of wine from our own vineyard or a dish prepared with our olive oil is more than just flavour. It is a sense of place. Our guests not only understand where they are, they experience it with all their senses. The fact that this approach is recognised internationally, for example through recommendations in the Michelin Guide or ratings from Falstaff and Gault & Millau, confirms that we are on the right track. At the same time, it spurs us on to consistently develop our philosophy of quality, regionality and artisanal precision.
How do you put sustainability into practice?
For us, sustainability is inextricably linked to quality. In agriculture, we work in harmony with nature and respect its cycles. Throughout the business, we ensure the mindful use of resources, from energy to water. A key element is our close collaboration with local producers. This allows us to work with seasonal and regional produce whilst authentically reflecting the diversity of Istrian cuisine. For us, sustainability isn’t something we shout about, but rather the result of many small, consistent decisions.
What do you personally love most about your work?
It’s the interplay between people, place and emotion. Watching guests arrive and gradually connect with their surroundings, often very quietly and without saying much, is something special. And, of course, the cuisine. A perfectly balanced menu, a wine that captures the moment. Creating these moments is at the heart of our work. What fulfils me most is our team. It is the many dedicated people behind the scenes who, with passion and sensitivity, contribute every day to turning a stay into a genuine experience. This shared pursuit of quality brings Meneghetti to life, and that is exactly what our guests sense.
How do you define luxury, and what is often underestimated in this regard?
For me, luxury has nothing to do with gold or outward displays. True luxury is tranquillity. A state of inner balance and contentment. This is particularly evident in the culinary arts. The quality of a product, its provenance, the simplicity of its perfect preparation. What is often underestimated is this conscious reduction. The omission of the superfluous in favour of authenticity.
True luxury is quiet. And that is precisely where its power lies. It is the feeling of being fully present in the moment, without distraction. Attentive, unobtrusive service, a place that gives you space to breathe, and details that do not need to be loud to make an impact. Ultimately, luxury is not something you see, but something you feel and take with you.

Roko Palmic has over twenty years’ experience in the international luxury hospitality industry. His career has taken him through renowned brands such as Park Hyatt, Marriott, InterContinental and Regent Hotels.
Prior to joining Meneghetti, he held senior positions in sales and marketing, including at The Chedi Muscat and Regent Porto Montenegro. His international experience and his understanding of discerning guests are now key factors in shaping Meneghetti’s positioning as a stylish yet authentic luxury destination.
