Alexandra Gorsche spoke with Walter Theiner about the origins of his vision, sustainability in practice, detox as a way of life – and why sometimes, tranquility is the greatest innovation of all.
ALEXANDRA GORSCHE: What was the decisive moment that set the construction of theiner's garten as a Demeter-recommended organic wellness hotel in motion?
WALTER THEINER: Our family has been involved in organic farming, organic processing, and organic trade for over 40 years. When our children took over the management of the businesses, my wife and I felt we were still too young to retire – and decided to take it one step further. Many of our customers told us that they had to give up their usual organic food while on vacation. This gave rise to the idea of creating a hotel that consistently continues this lifestyle.
“Time, space, naturalness” – what does this triad mean to you personally?
You should take time and leisure – for yourself, for your family and fellow human beings, and of course for our guests. By space, I mean the immediate surroundings, a place of well-being inside and outside the house – and also the larger context: our earth, to the preservation of which everyone can contribute. Naturalness, in turn, gives us happiness, humility, and contentment.
How do you manage to convey sustainability not just as a trend, but as a lived value?
For our family, sustainability is not a buzzword, but a lived conviction. Guests sense this – in conversations, on tours of the house and garden. Many tell us later that they have made changes at home themselves. That is exactly our goal.
Your hotel is considered the most climate-friendly hotel in the Alpine region—what are you particularly proud of?
We were particularly proud because it was not only the construction method that was evaluated, but the entire business model. And because environmental agencies from all six Alpine countries were involved in the decision—that was a great sign of recognition.
What role does building biology play in the well-being of guests?
The natural materials—solid wood, clay, untreated fabrics—have an immediate effect. The reduction of electromagnetic radiation and the absence of chemicals create a noticeable sense of calm. Many guests say they sleep better here than at home.
No Wi-Fi, no TV, no minibar—do these decisions come as a surprise to people?
Hardly anyone misses the TV and minibar—many enjoy taking a “break from television” for once. Wi-Fi was completely switched off at first, but some guests need to be available for work. That's why there are now certain areas with Wi-Fi, but the entire house remains offline at night.
How do you implement the concept of 100% organic from garden to plate in everyday life?
We have been involved in the organic sector for decades and know most of the producers personally. All orders are handled centrally by my wife and her team, who pay close attention to certifications. More than 30 local organic farmers and two organic wholesalers supply us regularly.
Which products from the hotel's own Demeter farm are your biggest highlights?
Our farm not only produces apples, but also pears, apricots, plums, peaches, nectarines, table grapes, persimmons, quinces, and even Indian bananas—each fruit is a highlight in its own season. Our herb and vegetable garden on the hotel terrace is a special experience, where guests can watch the chefs harvesting.
Plant-based cuisine is considered the key to sustainability—how do you make it enjoyable and exciting?
Our head chef Markus is incredibly creative. Even die-hard meat lovers choose his vegetarian menus because they are flavorful, sophisticated, and full of energy.
Your Organic Detox Retreat promises energy and mindfulness – what makes it so special?
Our detox program is less about losing weight and more about purifying, detoxifying, and deacidifying – without sacrifice, but with plenty of enjoyment. It is particularly popular with people who often eat out in their everyday lives.
Burnout prevention as a hotel concept – how is this implemented in practice?
The tranquility of the hotel, yoga, nature walks, and individual care help guests to let go of their everyday lives. A former burnout patient told me that she was healed by the peace and nature here. Our coach Ingrid provides mental support to guests on request and helps them to gain new perspectives.
What feedback do you get from guests after a mental detox week?
Many say they feel lighter, more relaxed, and full of energy. Some even report that they have found themselves again here.

You have been recognized for your mobility concept – how do you encourage guests to travel without a car?
We pick guests up from the train station in an electric car, give them a free South Tyrol Mobility Card, and tell them about e-bikes and public transportation. That way, sustainability starts right from the moment they arrive.
E-bikes, shuttles, solar charging stations—which services are used the most?
E-bikes, without a doubt! But public transport is also used surprisingly often – even by guests who arrive by car. Our six solar charging stations are usually free, but we installed them deliberately as an investment in the future.
You have an impressive regular guest rate of 60%. What is the secret?
I think it's the feeling of being welcome – with genuine warmth, a family atmosphere, and a hotel that radiates comfort. Many of our guests have become friends over the years.
What projects or innovations are you planning for the coming years?
At almost 80 years old, I'm happy to leave the planning to the next generation. They already have a lot planned – first up is the modernization of the dining room.
If you could choose one thing for guests to take away with them after their stay, what would it be?
That they feel rested, refreshed, and strengthened inside—and that they want to come back when they are looking for peace and quiet in a natural, friendly environment.
