Today, experiential dining is one of the strongest drivers of modern hospitality – emotional, sensual, and unforgettable. Formats such as Toni Mörwald’s PALAZZO in Vienna show how perfectly cuisine, culture, and staging can merge and why spending time together has become the most valuable luxury. “Better Together” exemplifies a trend that is shaping the industry and booming as a gift idea, especially at Christmas: enjoyment, entertainment, and shared amazement in an evening full of magic.

At the cutting edge

Experiential dining is experiencing a remarkable boom. What began as a “dinner show” has now become one of the most exciting formats when it comes to emotional enjoyment, community, and creative hospitality. At a time when restaurants are increasingly confronted with guests' desire for meaning, connection, and quality experiences, concepts such as Toni Mörwald PALAZZO are setting new standards. They combine cuisine, culture, and staging to create an immersive world—an evening that touches, surprises, and lingers long after it's over.

The launch of the “Better Together” show in November was celebrated with minutes of standing ovations. But the audience's enthusiasm is symbolic of something much bigger: a society that is looking for shared time, moments of wonder, and experiences that touch the mind, heart, and palate in equal measure. And this is precisely where the new strength of experiential gastronomy begins.

The menu: cuisine that completes the evening

What would experiential dining be without a menu that brings emotion, craftsmanship, and seasonality to the plate? For the current PALAZZO season, Toni Mörwald has created a four-course composition that harmonizes perfectly with the dramaturgy of the evening: aromatic, wintery, elegant, and with those fine details that make an evening at the Spiegelpalast unforgettable, even from a culinary perspective. Both the classic menu and the vegetarian option show how contemporary enjoyment can be today – conscious, creative, and carefully tailored to the atmosphere of the show.

The four-course menu

  1. Starter
Goat cheese and caramel tartlets with chili walnut crunch and winter leaf salads
  2. Intermediate course
Medallion of winter cod on spicy beluga lentils and paprika foam
  3. Main course
Duet of duck breast roasted pink and confit ragout with Riesling apples, champagne cabbage, honey jus, and potato dumplings
  4. Dessert
Toni's chocolate craquelin on fruit cocktail, served with cassis sorbet

The highlights of artistry – When gravity dances – the artistry of “Better Together”

The PALAZZO show in Vienna brings top international artistry to the Spiegelpalast – powerful, poetic, and full of goosebump moments.

Hand-to-hand acrobats Mohammed Husseni and Mohammed Ramadhani (Tanzania) demonstrate in perfect symbiosis what trust and precision mean. Alberto Rabago (Mexico) impresses on the Chinese pole with powerful figures and charming interaction with the audience. Anna Fisher (Australia) provides energy and humor, presenting a whole new dimension of this art with her passionate hula hoop act. Yordi (Ethiopia) fascinates with antipode juggling – a rare discipline in which she effortlessly juggles tables and carpets with her feet. Liu Wenlong (China) builds a breathtaking balancing act out of 16 benches, while Manda Rydman (Sweden) floats through the Spiegelpalast as a “mermaid on a ring” with her elegant aerial ring artistry. The musical accompaniment is provided by The Ferris Wheelers under bandleader Martin Zaunschirm and the powerful voice of Niamh Shoyinka, who lend the evening a special atmosphere.

Why experiential dining is so important today

Guests are no longer just looking for a meal—they are looking for something that will stay with them. An evening should feel like a break from everyday life: multisensory, surprising, emotional. Experiential dining creates exactly that. It combines high-quality cuisine with staging, entertainment, and atmosphere. The result is not a product, but a feeling.

“Better Together” shows what this aspiration can look like today: world-class acrobatics meets gourmet cuisine, live music meets finely composed dramaturgy, poetry meets humor. The show embodies what guests expect today: authenticity, energy, closeness, connection. It's about joie de vivre – tangible, visible, palatable.

It is this mixture that makes experiential gastronomy a decisive success factor in the industry. While classic gastronomy struggles to attract attention, experiential formats offer something that cannot be copied: a world you can enter.

Quality time as a new luxury good – and why PALAZZO is a symbol of this

The true luxury of our time is not caviar or champagne, but time spent together. Time with partners, friends, family – without distractions, without screens, without obligations. Experiential gastronomy creates spaces for precisely these moments. Spaces that connect people, give them opportunities for conversation, and allow them to marvel together.

At PALAZZO, people don't just meet to eat. They share emotions, laugh together at charismatic moderation, hold their breath when artists transform weightlessness into art, and enjoy a menu that blends seamlessly into the production. Here, cuisine and culture are not juxtaposed – they merge into an unforgettable experience.

The perfect gift idea: an experience to remember

In times when many people consciously want to own fewer things, experiences are becoming increasingly popular as gifts. PALAZZO evenings are among the most wonderful gifts you can give: personal, emotional, high-quality, and full of shared moments.

Whether for Christmas, birthdays, New Year's celebrations, or as a thank you, an evening at the Spiegelpalast is a gift that never fails to give goosebumps with its atmosphere, cuisine, and live performances. It is a gift that people don't put on a shelf—they store it in their hearts.

The current show, “Better Together,” sums up this idea perfectly. It celebrates togetherness – and has thus become the perfect gift at a time when closeness and community are more valuable than ever.

An evening that brings people together – and a format that helps shape the future

Until March 22, 2026, the Spiegelpalast in Vienna's Prater park will once again be transformed into a place where you can arrive, enjoy yourself, and leave everything behind for a few hours. “Better Together” is more than just a show – it is a plea for how strongly experiences can change our perception, how deeply cuisine can move us, and how valuable shared moments are.

Experiential gastronomy is currently impressively demonstrating what will distinguish the industry in the future: not only quality on the plate, but quality throughout the entire experience. And by the time you leave the Spiegelpalast, you will feel that this is exactly what will remain.
