ALEXANDRA GORSCHE: You have been managing the Anantara Palais Hansen for around a year now. What has been the most significant change you have introduced?
JÜRGEN AMMERSTORFER: The most significant change was a clear shift in perspective. We deliberately reimagined the hotel as an urban luxury resort. It is intended to be a haven of tranquillity in the heart of the city, combining history, culture, cuisine and wellness. At the same time, I placed a strong emphasis from the very beginning on hospitality that is personal, attentive and authentic.
You often say that there must be no ‘copy and paste’. Where is this approach particularly evident today?
In the way a stay feels for our guests. Luxury should not come across as heavy or formal, but rather light, natural and effortless. Many of the most beautiful experiences arise from small, intuitive gestures. A personal touch in the room or a reminder of individual preferences can make a decisive difference.
What was your biggest challenge?
Not only to preserve the history of the hotel, but to make it truly tangible for guests without becoming nostalgic. Today, the Palais Hansen feels modern and vibrant, yet deeply connected to its history.
What have you learnt about your guests?
Today, our guests are looking for more than just luxury; they are seeking meaning. They want to feel understood, experience authenticity and take home emotional memories. That is precisely why we consistently focus on personalisation and storytelling.
Which innovation has had a particularly strong influence on the hotel’s identity?
Our dining concepts are particularly influential. The Michelin-starred restaurant EDVARD stands for the highest culinary precision. Theo’s Lounge & Bar represents the urban, open side of the hotel and was named Vienna Hotel Bar of the Year. This diversity under one roof makes our hotel unique.
Has the Palais Hansen returned to Vienna?
Definitely. Theo’s Lounge & Bar and our Palais Nights have played a decisive role in this. We have welcomed more than 1,000 guests to individual events. This shows that the hotel has once again become an active part of Viennese city life.
How do you position the hotel within Vienna’s culinary and cultural scene?
We see ourselves as co-creators. With EDVARD, we are setting international standards, whilst remaining deeply rooted in Vienna. Concepts such as Theo’s Tea Time combine classic Viennese elegance with a contemporary interpretation.
What do you want guests to say about the hotel today?
That this hotel has a soul. That they don’t just feel welcome, but truly seen and inspired. If guests say that their stay was far more than just a night’s accommodation, then we have achieved our goal.
What role does the spa play?
The Anantara Spa is a central part of the overall experience. It completes the feeling of an urban hideaway and offers guests a retreat right in the heart of Vienna.
In what direction should the Palais Hansen develop?
I would like to further enhance the cultural dimension of the hotel whilst continuing to invest in our team. Because exceptional hospitality always comes from people.
